Chenin Blanc is famous for fabulous expressions in the Loire Valley in France. Also widely planted in South Africa where it is often called Steen. A wine of high acidity it is used in everything from sparkling wines to dessert wines. A fairly neutral wine, it can transform based on the terroir of the vineyard. In cool regions it is crisp, high in acidity with tropical fruits. Often underripe grapes from these cooler regions will be make into sparkling wine. In warmer regions, when made dry, it can possess notes of quince and apple. Places such as Vouvray specialize in an off-dry style can express itself with a honeyed taste.
