Dirty Chai Toddy

Ingredients For Chai:

  • 8oz Half & Half
  • 40z Water
  • 1 Cinnamon Stick
  • 2 Crushed Black Cardamom Pods
  • 6 Crushed Pink Peppercorns
  • 1.5 inch piece of fresh ginger peeled and flattened
  • 2 tbsp Turbinado Sugar
  • 2 Sachets of Organic Whole Leaf Black Tea

Ingredients For The Dirty Toddy:

  • 2 oz Espresso
  • 2oz Good Bourbon

Dirty Chai Toddy

 Instructions:

  • Combine Half and Half, water, spices and sugar in a small saucepan
  • Bring to a boil and simmer for 8 minutes while stirring occasionally
  • Remove from heat and add black tea sachets and steep for 5 minutes
  • Remove sachets, strain out spices and pour chai into your glasses
  • Add one oz espresso and one oz of bourbon to each cup
  • Enjoy Responsibly!

 

Brown Butter Spiced Ale

Ingredients:

  • 12oz ale
  • 2 tbsp unsalted butter browned
  • 3 tbsp dark brown sugar
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • Brandy
  • Cinnamon Stick for garnish

Brown Butter Spiced Ale

 Preparation:

  • Add butter to small saucepan and melt on medium heat until butter is light brown.  (about 3min)
  • Reduce heat to low and and brown sugar and spices.  Cook until brown sugar is dissolved and mixture is pastelike
  • Scrape paste into small bowl and cover with foil
  • Add the ale to the same saucepan on medium heat until hot.
  • Spoon 2 spoonfulls of the butter paste into serving glass and pour hot ale into glass.
  • Add a splash of brandy and stir
  • Garnish with cinnamon stick

Bumble Brown Punch

Ingredients:

  • 2 cups water
  • 1/4 tsp allspice
  • 1 tsp grated nutmeg
  • 2 cinnamon sticks
  • 4 cracked cardamom pods
  • 1 sliced apple
  • 1/2 cup brown sugar
  • 3 bottles honey amber lager
  • 9 oz rum

Bumble Brown Punch

 Preparation:

  • Add the water, allspice, nutmeg, cinnamon sticks, cardamom, apple slices and brown sugar to a large saucepan on medium heat.  Stir frequently to dissolve the brown sugar.
  • Heat to a slight boil and turn heat to low and simmer for 10 minutes then add the lager and rum to warm up but not boil.
  • Remove spices
  • Pour into glasses
  • Add apple slices for garnish
